Truffle in the kitchen
Usually truffles available on the market are already cleaned, at least superficially. In fact, if it were covered by a lot of land, the consumer could not completely verify its freshness and characteristics. Once bought, it is advisable to leave a light layer of earth on the surface of the truffle as this will allow the fungus not to disperse its aroma and to ripen a little more. Otherwise it would remain in the open air and so it risks losing its organoleptic qualities. Then, when you want to consume it, you really clean it: using a small brush or a toothbrush, gently massage the surface of the truffle together with very little water. Be careful not to use too much water because you could easily ruin the tuber. The white truffle is really delicate, so be graceful, instead the black truffle has a color similar to that of the earth and therefore observe it well and be careful not to leave any residue. After cleaning, which must be done just before using it, you can enjoy it safely!
